Household Chicken Soup

Image
Last year I made chicken soup 3 times.  It turned out pretty good and was very soothing, so I decided to share the recipe again. This recipe is still a go-to during the cold and flu season. I hope that you will give it a try and enjoy it as much as we did.

Eggplant Parmesan

I believe that I clipped this recipe from The Houston Chronicle over 20 years ago, and it's definitely a keeper.  However, if you're the type of cook that would like to get out of the kitchen pretty fast, you may think that it's too time-consuming.

Cornish Hens with Carrots

Image
I cook Cornish hens often, but not always the same way. I guess you can say that about a lot of my meals. This time around, I decided to add some carrots in with the hens. The basting of the Cornish hens required a little butter or ghee. The ghee and the broth from the hens gave a delightful favor.  A lot of my recipes have been updated to accommodate the Paleo or Whole 30 lifestyle.  I did, however, include the rice for those of us who still enjoy it on occasion.  Enjoy! Cornish Hens with Carrots I'd appreciate your letting me know if you prepare the dish.

Basmati Rice

This is very light and fragrant rice.  I'm not a fan of white rice but I enjoy this rice.  Believe it or not, there are several health benefits of Basmati Rice.  Take a look at the link below or check out one for yourself:

Okra and Tomatoes

Try adding shrimp or pre-cooked sliced sausages to your okra and tomatoes and serve over rice for a complete meal.
