Golden Rice Pilaf
Ingredients:
- 1 tablespoon olive oil
- 2 tablespoon butter or ghee
- ½ cup green onions, chopped
- 1 garlic clove, finely chopped
- 1/4 cup celery, chopped
- 7-10 fresh asparagus, cut into large pieces
- 1 cup uncooked Parboiled rice
- ½ cup orzo
- ½ turmeric teaspoon
- 3 cups chicken broth
- ½ tea salt
- ½ golden raisins
- ½ cup chopped almonds, toasted
- In a large skillet, sauté green onions, garlic, asparagus and, celery in butter and olive until tender
- Stir in rice, orzo, salt, and turmeric powder
- Sauté for 2-3 minutes or until rice and orzo are lightly browned
- Pour broth over rice mixture; stir
- Cover and simmer for 35 minutes or until rice is tender
- Stir in raisins and almonds
- Remove from the heat
