Italian Garlic & Cheese Potatoes

Most of the time when I’m cooking I try to think outside of the box because no one wants the same boring meal. As I was preparing smothered potatoes one afternoon, I decided to put my twist on a very simple recipe. Enjoy!













Ingredients:
  • 2-1/2 pounds Russet potatoes, sliced
  • 2 tablespoons roasted garlic olive oil
  • 1 onion, chopped
  • 1 teaspoon hot smoked paprika
  • Salt and pepper to taste
  • 1/4 cup Italian dressing with garlic and Asiago cheese (used Kens’ Steak House brand)
Directions:
  1. Slice potatoes to desired thickness
  2. Add olive oil to a large skillet
  3. Add potatoes; cook for about ten minutes over medium heat
  4. Add onions, paprika, salt and pepper
  5. Cover with a lid; reduce heat to low
  6. Check in about ten minutes to ensure that the potatoes are fork-tender
  7. Once potatoes are tender, add dressing and remove from the heat
  8. Let the potatoes remain covered for about two minutes
  9. Serve
Twist: Italian dressing with garlic and Asiago cheese. A little of the dressing makes a big difference in the taste.
