Potato Chicken Sausage Frittata

Frittatas are so good and simple to make. They are an easy version of omelets. Consider making one for a brunch.











Ingredients:
  • 3/4 lbs. Chicken Sausage w/Spinach and Feta Cheese (removed from casing) 
  • 4 medium-size potatoes, diced (I used Yukon potatoes) 
  • 1/2 cup green onions, chopped (include some of the tops) 
  • 8 large eggs, beaten 
  • 3 tablespoons milk (I used 2%) 
  • 3/4 cup freshly grated Parmesan cheese 
  • 1 teaspoon Cajun seasoning 
  • 1 teaspoon hot smoked paprika 
  • 1 teaspoon salt 
  • 2 teaspoons canola oil 
  • 2 teaspoons minced fresh parsley





Directions:
  1. Preheat oven to 375 degrees F.
  2. Add canola oil to a medium-size skillet
  3. When the oil is hot, add potatoes   
  4. Add green onions, after the potatoes have cooked for about 5 minutes
  5. In the meantime, cook chicken sausage over medium heat in a small sauté pan
  6. Cook potatoes until almost fork-tender
  7. In a medium bowl or large measuring cup, mix eggs, seasonings, milk and parmesan cheese
  8. Spread potatoes and chicken sausage in the bottom of an oven-proof casserole dish
  9. Pour egg mixture over potatoes and sausage; place in the oven
  10. Bake the frittata until it puffs and a knife inserted in the middle comes out clean (about 20 minutes)
