Potato Chicken Sausage Frittata
Frittatas are so good and simple to make. They are an easy version of omelets. Consider making one for a brunch.
Ingredients:

Hot smoked paprika La Dalia Pimenton De La Vera Picante DOP Hot Smoked Paprika
Cajun seasonings Frontier Cajun Seasoning Certified Organic, 2.08-Ounce Bottle
Ingredients:
- 3/4 lbs. Chicken Sausage w/Spinach and Feta Cheese (removed from casing)
- 4 medium-size potatoes, diced (I used Yukon potatoes)
- 1/2 cup green onions, chopped (include some of the tops)
- 8 large eggs, beaten
- 3 tablespoons milk (I used 2%)
- 3/4 cup freshly grated Parmesan cheese
- 1 teaspoon Cajun seasoning
- 1 teaspoon hot smoked paprika
- 1 teaspoon salt
- 2 teaspoons canola oil
- 2 teaspoons minced fresh parsley
- Preheat oven to 375 degrees F.
- Add canola oil to a medium-size skillet
- When the oil is hot, add potatoes
- Add green onions, after the potatoes have cooked for about 5 minutes
- In the meantime, cook chicken sausage over medium heat in a small sauté pan
- Cook potatoes until almost fork-tender
- In a medium bowl or large measuring cup, mix eggs, seasonings, milk and parmesan cheese
- Spread potatoes and chicken sausage in the bottom of an oven-proof casserole dish
- Pour egg mixture over potatoes and sausage; place in the oven
- Bake the frittata until it puffs and a knife inserted in the middle comes out clean (about 20 minutes)
