Salmon Patties




Ever wish that you had more time to spend in the kitchen? Well just in case you don't, try preparing delicious salmon patties for dinner in just 30 minutes. 

They are easy to prepare and your family and friends will appreciate the extra time left for talking about this tasty meal. Try this recipe:

Ingredients:
  • 2 (14.75 oz.) cans of pink salmon, drained; reserve 4 tablespoons of the liquid 
  • 1 small onion, chopped 
  • 1/2 small bell pepper, chopped 
  • 2 eggs 
  • 1 cup of crushed crackers 
  • 1 /2 teaspoon dried dill weed 
  • 2 teaspoons lemon juice 
  • 1 teaspoon prepared mustard 
  • 1 teaspoon mayonnaise 
  • 1/2 teaspoon garlic powder 
  • 1/2 teaspoon crushed red pepper flakes 
  • 1/2 cup cornmeal 
  • 4 tablespoons all-purpose flour
Directions:
  1. Combine all the ingredients in a medium bowl except the last two.
  2. Shape salmon mixture into 1" thick patties.
  3. Mix together cornmeal and flour.
  4. Coat patties with cornmeal mixture.
  5. Pan fry in about an inch of Canola oil until brown on both sides.        
Twist:  Sauté onions and bell peppers until tender, add to salmon mixture
