Basmati Rice

This is very light and fragrant rice.  I'm not a fan of white rice but I enjoy this one.  Believe it or not, there are several health benefits of Basmati Rice.  Take a look at the link below or check out one for yourself:

Health benefits of basmati rice

  • 1 cup Basmati rice
  • 3 tablespoons olive oil
  • 14 oz. chicken or vegetable broth
  • 1 small onion, finely chopped 
  • 1/2 cup red bell pepper, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 3 cloves garlic, finely chopped
  • 1/2  teaspoon crushed red pepper flakes
  • 1/4  teaspoon turmeric powder
  • 1/2  teaspoon salt
  • 1/2  teaspoon cayenne pepper
  1. In a large skillet, cook onions and bell pepper in olive oil about 5 minutes
  2. Add chopped garlic, continue cooking about 5 minutes
  3. Add rice and cook 2 more minutes
  4. Add roasted garlic chicken or vegetable broth and remaining seasonings
  5. Cover and simmer for about 15-20 minutes
Twist: Used Turmeric in place of saffron. Turmeric which has become known as Indian saffron is widely used as an alternative to the expensive saffron spice.
