Golden Rice Pilaf





Ingredients:
  • 1 tablespoon  olive oil 
  • 2 tablespoon butter or ghee 
  • ½ cup green onions, chopped 
  • 1 garlic clove, finely chopped 
  • 1/4 cup celery, chopped 
  • 7-10 fresh asparagus, cut into large pieces 
  • 1 cup uncooked Parboiled rice 
  • ½ cup orzo 
  • ½ turmeric teaspoon 
  • 3 cups chicken broth 
  • ½ tea salt 
  • ½ golden raisins 
  • ½ cup chopped almonds, toasted 
Directions:
  1. In a large skillet, sauté green onions, garlic, asparagus and, celery in butter and olive until tender 
  2. Stir in rice, orzo, salt, and turmeric powder 
  3. Sauté for 2-3 minutes or until rice and orzo are lightly browned 
  4. Pour broth over rice mixture; stir 
  5. Cover and simmer for 35 minutes or until rice is tender 
  6. Stir in raisins and almonds 
  7. Remove from the heat 
Twist: turmeric powder, fresh asparagus
