Pecan Pie

Easy, scrumptious, and unforgettable!

This is the best pecan pie recipe you’ll find:

  • 1/3 cup of butter
  • 2/3 cup sugar 
  • 3 eggs, lightly beaten 
  • Dash salt
  • 1 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecan halves
  • 1 (9-in) unbaked pie shell
  1. Cream butter and sugar in a bowl just until blended.
  2. Add beaten eggs, salt and corn syrup.
  3. Pour pecans into unbaked pie shell, add filling and bake at 375 degrees for about 40-50 minutes or until set (when knife inserted in center comes out clean).
Twist:  Occasionally I add 1 teaspoon of bourbon; you may substitute favorite liqueur.

Chicken/Turkey and Dressing

Bake your chicken in an oven bag and add a couple of stalks of celery, green onions and season to taste. In addition, add a 1/2 cup of water so that you will have broth for your dressing.
If desired, bake your chicken the way in normally do.

Sometimes I use an oven bag when I’m not cooking a turkey or large dinner.

Sweet Potatoes

 Sweet Potato or Yam?

Well according to researchers, “I’m a sweet potato because I was grown in the United States.”  Sweet potatoes and yams are both tubers, and not related. 
I prefer to bake sweet potatoes as opposed to boiling because it caramelizes the natural sugars.  Sweet potatoes are full of flavor and packed with vitamins A & C.

Tomato Basil Soup

There’s nothing like Tomato Basil Soup. 

I wasn’t sure how the soup would come out since I didn’t have fresh tomatoes on hand; however, it was fantastic.

Now I’m convinced that I can enjoy one of my favorite soups anytime of the year.  In an effort to cut back on my spending, I’m trying to use what I have.  In doing so, the results have been very rewarding.
